Delmonico Steak with Whiskey Cream Sauce

I love the idea of an upscale dinner night at home. With the quality of grocers, growers, and ingredients out there these days, this is an affordable way for a great date night at home. For this recipe skip out on the steakhouse and make you own rich classic steakhouse dish at home. Use higher welfare beef, like the kind produced by our friends at Elevation beef and get a larger cut to share for 2. This is a great, rich dinner dish for a special occasion or even a weeknight day night. 

2 lbs. Delmonico steak, Scotch Fillet, Eye of Rib Steak
2 Tbsp. unsalted butter
1/3 cup Scotch or Irish whiskey
3/4 cup Heavy Cream
1 Tbsp. J. Brady’s The Gentleman’s Shake British Inspired Seasoning
Kosher Salt and black pepper

Let steak(s) come to room temperature and pat with paper towel to remove moisture. Heat a heavy skillet to medium high heat. Melt 1 Tbsp of butter in the skillet. Seasoning Steak lightly with kosher salt and pepper. Cook the steaks in the pan 4-5 minutes per side, only turning once and not moving around as to allow a good crust to form. Steak(s) should be cooked medium rare to medium. Remove steaks and allow to rest for 5-10 minutes. In the same skillet melt the remaining Tbsp. of butter. Once melted pour in the whiskey and cook for 1-2 minutes or until alcohol has cooked off and brown bits on the bottom of the pan are scraped up. Add the J. Brady’s Gentleman’s Shake to the pan and stir for 30 seconds or until incorporated. Lower heat to medium low and stir in the heavy cream. Stir while cooking to a very low simmer (2-3 minutes) and turn off heat. To serve slice the steak in ½” slices on a large plate and drizzle the top with the cream sauce. Enjoy!
