You know we're all about the beef here at Elevation. But sometimes, we do need something to go with all that beef. And that's where this side dish comes in. It's a blend of two different recipes (both good on their own) but even better together. This is the perfect side dish for your Valentine's dinner. We recommend our delicious and easy steak au poivre for two for the star of dinner.
Ingredients:
1 head cauliflower
1/2 c. olive oil
2 Tbsp. kosher salt
1 tsp. ground turmeric
1 tsp. paprika
4 cloves of garlic
1 jalapeno, sliced lengthwise with seeds removed
2 Tbsp. butter
1/4 c. hulled pumpkin seeds
1 lemon
1/2 c. tahini
Handful of chopped cilantro or parsley
Directions:
Heat oven to 400 degrees. Cut cauliflower into florets. And mix with olive oil, salt, turmeric, paprika, garlic and jalapeno. Cook for 15 minutes before flipping and cooking for another 20. Feel free to broil for a little extra char.
While cauliflower is cooking, take the butter and let it melt in a medium skillet over medium heat. Once butter is melted, add the pumpkin seeds and let the butter brown until it's light brown and smells toasty.
Arrange cauliflower on serving plate and drizzle with tahini, pumpkin seeds, butter and lemon. Garnish with chopped herbs.
